Easy Rhubarb Cake

Another easy recipe (notice a theme? We like easy in our house….)

Rhubarb

Chopped rhubarb

1 white or yellow cake mix
3 eggs
1/3 C oil
1 1/2 C water
3 C chopped rhubarb
1/2 C sugar
2 C heavy cream

Mix first 4 ingredients together, then pour into prepared 9X13 pan. Sprinkle chopped rhubarb over top of batter. Sprinkle sugar over the rhubarb, then top with 2 C cream.

Bake at 350 for 40 minutes or until knife comes out clean. The fruit mostly sinks to the bottom, as does the cream and you end up with this yummy custard-y stuff on the bottom of the pan. (That would be the technical cooking term, by the way – custardy-y stuff.)

We use rhubarb from our own yard. That stuff is easy to grow, comes back every year and saves you the $4/lb you pay in the store!
