Pumpkin Waffles

Pumpkin waffles
We triple this batch. It makes plenty! Serve with buttermilk syrup.

2 C flour
2 Tbsp baking powder
1 Tbsp cinnamon
1 Tbsp sugar
1/2 tsp nutmeg
1/2 tsp coriander
1/4 tsp salt
4 eggs
1 1/2 C milk
1 C pumpkin
3/4 C melted butter
1 Tbsp vanilla

Combine dry ingredients and set aside. (Or do what I do – add half the flour to the wet ingredients, mix, add the other dry ingredients, then the last 1/2 of the flour and mix again.)
Separate eggs and start beating egg whites while mixing the rest of the ingredients. Stop when you get stiff peaks. In the meantime, put yolks into large bowl, then add milk, pumpkin, melted butter and vanilla and mix. Add dry ingredients and blend, then fold in egg whites. Cook on waffle iron until desired crispness.
